What is the Certificate III in Commercial Cookery?

This qualification provides students with a wide range of cookery skills and a sound knowledge of kitchen operations, allowing them to prepare food and menu items as a professional cook. Graduates can work as part of a team or independently, applying discretion and judgement and using existing kitchen plans, policies and procedures to guide their work.

Starting with basic methods, students learn the practical skills of food preparation, including safe food handling practices, the use of common food preparation equipment, how to serve food in a commercial kitchen environment, and how to correctly clean food preparation areas. They’ll also learn recipes and cooking methods for a range of food types, including meat dishes, poultry dishes, vegetarian and vegan dishes, and seafood dishes.

Successful completion of this course provides the skills to work as a commercial cook in organisations such as restaurants, hotels, clubs, pubs, cafes, and coffee shops.

How is the course presented?

The course is delivered in a blended format, with a mix of face-to-face practical skills training and self-paced online learning. The in class component is highly practical and hands-on, with extensive time in the kitchen learning practical cooking skills and putting them to the test.

The course also involves a significant practical placement, working in an active commercial kitchen alongside experienced chefs, and putting their training into practice.

How long will it take to complete the SIT30821 course?

The course takes place over 52 weeks of study – effectively a full year of learning. This includes orientation, in-class learning, all assessments, and the practical placement component.

How much time will I need to invest each week?

The SIT30821 training is a full-time course, and students should expect to spend at least 20 hours each week studying the course.

The practical placement will require a more intense time commitment – students must complete 48 shifts (each shift being a complete food service period) in a commercial kitchen environment. This must include shifts for breakfast, lunch, dinner, and event service.

Students should expect that many of these shifts will start, end, or wholly take place outside of normal work hours.

Can I get RPL for subjects I've studied before?

If you have previously studied any of the modules included in the SIT30821 course, you can apply for a credit transfer.

You may also have industry experience that may be eligible for recognition of prior learning (RPL).

If either of these are granted, you may not need to complete some units and may be eligible to complete the course in a shorter time.

Building on the skills of the Certificate III in Commercial Cookery, this qualification provides cooks and chefs with the additional skills and knowledge they’ll need to take on a supervisory role in the kitchen – such as head chef or catering manager, or to manage staff to run a small food business. 

SIT50422 Diploma in Hospitality Management

This qualification builds on both the Certificate III in Commercial Cookery and the Certificate IV in Kitchen Management, and provides students with the specialised expertise to work at a senior level within hospitality, managing catering within large organisations or running small to medium hospitality businesses. Graduates are trained to manage large numbers of staff and make significant business decisions within their roles.

Entry Requirements

Are there any entry requirements for the SIT30821 course?

The cert 3 commercial cookery does not have any prerequisites in terms of previous training courses or study units. However, there are a few criteria students must meet to be eligible to study the course with Solis College:

  • You must be at least 18 years old when you commence the course. 
  • You must be fluent in English – both written and spoken – and capable with common digital technology and basic numeracy. In some cases, Solis College may administer an LLN test to verify this. If so, students must achieve an IELTS score of at least 6.0 to be eligible for the course.
  • International students will require an IELTS score of at least 6.0 (or the equivalent from a different language test).
  • You must be able to show evidence of your COVID-19 vaccination status, as required by federal, local, and state/territory government regulations.

Some FAQs By Our Students

Most equipment required for the course will be provided by the training facility. Personal equipment - including uniforms and knives - are provided by the college at no extra cost.

However, students will need access to some basic resources to take part in the course. You will need:

  • A laptop with wifi capability, and current Microsoft Office software installed.
  • A private email address for communication with the college, and to access our student portal.
  • A working smartphone or mobile phone.

The course is assessed through a variety of methods.

Students will be expected to demonstrate their skills and knowledge through:

  • Written tests and knowledge assessments
  • Hands-on skills practice with direct observation by the trainer
  • Individual and group assignments

To complete the course, students must get a satisfactory mark in each assessment throughout the course.

If a student fails to receive a satisfactory mark in one of the course assessments, they will be given one opportunity to undertake the assessment again and complete it successfully.

If they do not achieve a satisfactory result when re-testing, not be able to graduate from the overall course unless they re-taker that unit - which will lengthen the overall duration of the course.

The SIT30821 Certificate III is recognised throughout Australia in all states and territories. The course is a nationally recognised qualification under the National Register of Vocational Education and Training.

And as an official registered training organisation within Australia, Solis College is fully accredited to provide the training.

Under certain circumstances, you may be asked if you have completed a different Commercial Cookery qualification - generally an older version of the same course.

This may happen when a manager or workplace is acting on older information. Some previous equivalents of the SIT30821 training include:
